Does Diabetes mean dismissing dessert? Lucky for us, not with E4 Diabetes Solutions’ Apple Pecan Cups. They have incredible flavor and are incredibly easy to make. But first, today’s tip is all about honoring the sweet with your own victory dance!!

So when you find yourself staring at your biggest temptation, take a breath and acknowledge that it’s there – and then do your happy dance as you just strut on by. Victory! You won! Think about how proud you’ll be when you look back and see that it just doesn’t have the same power over you.

Honor that sweet taste with fruit or a more raw treat. The easy and delicious Apple Pecan Cups are a dessert for the holiday that will give you a sweet treat, but not throw you off your game.

Apple Pecan Cups

2 Cups Pecans

4 Pitted Mejool Dates

2 Cups Small Chopped Apples See Note

2 Tablespoons Pomegranate Seeds

Start with the Drizzle:

Put 1 cup of pecans in a food processor and turn on.  Process until butter is made. Take out of processor and store in bowl. Note: Two cups of pecans are used because most food processors need at least a cup of nuts for the volume to make the nut butter.

Then Make the Crust:

1. Put 1 cup of pecans in a clean food processor and pulse to create a meal. This will take about 20-30 pulses.

2. Add dates and process until they stick together about 5 seconds. Using your fingers line the bottom and halfway up the sides of the dessert cups with the crust.

Now for the Finish!

1. Fill the cup with the apples.

2. Warm the pecan butter over a steam bath or in the microwave.

3. Drizzle top with warm pecan butter.  

4. Garnish with pomegranate seeds

…et voila! In minutes, a beautifully elegant dessert for you and your loved ones. These simple, yet rich, cups are perfect for your holiday table and assemble in no time.  Pair it with a cup of hot tea and enjoy!

Makes 4 – 1-cup servings.

NOTE: Use you favorite apples, but firm, crisp apples like Jonamacs, Stamens, Galas or Granny Smith are better than softer apples such as Macintosh.
